Farmed organically though not certified, sourced from the Freeman vineyard in Hilltops, NSW.
Wild fermented together without adjustments; The Pinot Gris (75%) was destemmed into stainless steel along with the destemmed Sauvignon Blanc (25%), both were on skins for 20 days, seeing pump overs occur twice daily for the first week, and then left to macerate for the remainder of time on skins. Pressed & returned to stainless & old oak where the resulting wine remained on lees for 9 months before bottling. Unfined & unfiltered.
