To do less, you need to know more. Their low- interventionist winemaking is as much hands-off, as it is tuned on. The duo know their vineyards intricately, and craft only single-vineyard wines, picked early and respectfully to best reflect site and vintage. They use no cultured yeasts, enzymes or fining agents, allow the wines to stabilize naturally, and utilize only older oak and larger format barrels whenever possible .
The Stellenbosch wine region, located in South Africa's Western Cape, is one of the country's most renowned viticultural areas. This region is defined by its diverse terroir, where ancient soils ranging from imposing up-crops of granite, its varied weathered states, to shale provide a solid foundation for viticulture in a sensitive, organic embrace. The climate is distinctly Mediterranean, with warm, dry summers balanced by cooling breezes from nearby False Bay, which help to moderate temperatures & preserve acidity in the grapes. This combination of unique soils and favorable climate conditions allows Stellenbosch to produce a wide variety of high-quality wines, particularly known for their depth, structure, and elegance.
